Easy Caesar Salad

Ingredients

1 teaspoon salt
½ teaspoon pepper
3 whole Garlic cloves, minced
1 teaspoon dijon mustard
1 teaspoon worcestershire sauce
2 tablespoon chicken broth
2 tablespoon olive oil
½ cup freshly squeezed lemon juice
¼ cup grated parmesan cheese
2 whole Head of romaine lettuce, washed and dried, chopped
3 oz Anchovies (1 small tin)

Preparation

In a blender, combine the salt, pepper, garlic, mustard, Worcestershire, broth, and oil. Add the lemon juice and Parmesan. Pulse the blender on and off several times to combine. The dressing will be very thick. Cover and refrigerate until ready to use.

Tear the romaine into pieces and place in a large salad bowl. Add dressing to taste. Toss and divide the salad among four chilled plates. Garnish with anchovies. Add croutons if desired.
