Jelly-and-Peanut-Butter Bars

Ingredients

2 tablespoon butter
6 tbsp reduced-fat peanut butter
1 pkg betty crocker supermoist french vanilla cake mix
½ cup egg substitute
1 cup reduced-sugar jelly any flavored

Preparation

Preheat oven to 375°F. Spray the bottom of a baking pan with nonstick cooking spray.

Put the butter and peanut butter in a microwave safe bowl and on the defrost setting heat for 1 to 2 minutes (until butter has melted and peanut butter is soft). Put mixture into a mixing bowl.

Add the cake mix and the egg substitute.

Blend ingredients on low speed of mixer until dough forms. You may have to stir the mixture by hand a bit to incorporate all the loose crumbs. Spoon the dough into the prepared baking pan. Press dough to evenly cover bottom of pan.

Spread jelly evenly over the dough in pan to within 1/2 inch of edges using spoon. Bake 20 minutes or until just golden brown around edges. Cool completely. Cut into bars.
