Apple Cake

Ingredients

2 whole large eggs at room temperature
1/2 cup granulated sugar
1 cup all-purpose flour
1-1/2 tsp baking powder
1 cup unsalted butter softened
1 cups tart apple peeled, cored and cubed
1-1/2 tsp bourbon
1 teaspoon powdered sugar

Preparation

Preheat oven to 375° F. Butter the bottom and sides of a 9-inch round cake pan. Coat pan with 1 tbsp of flour and 1 tbsp of sugar (discard the excess).

Place the eggs in a medium mixing bowl with the sugar and beat with a wire whisk until they are thick and light. Sift the flour and baking powder together and stir it into the egg mixture. Stir in the butter and apples, and add the bourbon.

Spoon the batter into the cake pan and bake for 40 minutes or until a toothpick inserted into the center comes out clean. Let the cake cool for 10 minutes before removing it from the pan. Once cool, sprinkle it with powdered sugar.
